~ 2# of whole muscle steaks including tri-tip or coulotte (aka picanha)
~ 3# of hidden gem steaks which will include at least 2 of these cuts: denver, flat iron, chuck eye, and teres major steaks
~ 7# of center cut Steaks including: 4 ribeyes, 3 New York strips, and 2 filets
~ 2# of "flat steaks" including one of the following: flank, bavette, or skirt steak
~ 2# top sirloin steak
~ 4# of beef bones
