Bavettes are a thin steaks with a wide surface area. Pan-searing, grilling, or marinating are all great options. Be sure to cut against the grain, or you might end up with a little bit of a chewy steak!

Bavette steaks are portions cut from what we call the Sirloin Flap. This is a thin, wide steak that is highly sought after in restaurants. You'll see these called "Bistro Steaks" on menus!These are akin to a skirt steak, just a little thicker.
