Tri Tips are extremely versatile. Great for the smoker, reverse seared on the grill, or seared and finished in the oven. Shave it thin for sandwiches or sliced and served on a platter to share.

A favorite on the west coast, this whole muscle steak is collected from the hindquarter of the cow. Being able to offer cuts like the tri tip is one of the benefits of whole animal butchery! When we cook BBQ, we like to bring along a tri tip so we have something to eat while we wait for the BBQ to finish.
