This grass-fed tri tip is a California BBQ secret weapon, perfect for reverse-seared roasts, Santa Maria-style grilling, or slicing thin for incredible steak sandwiches and fajitas. Season with a simple rub and grill over high heat for 5-7 minutes per side, then move to indirect heat until it hits 130°F internal for medium-rare - the triangular shape means you'll get both rare and medium slices to please everyone.

Tri tip is all about the slice - always cut against the grain (which changes direction on this cut) into thin strips to showcase its robust beef flavor and tender texture at a fraction of premium steak prices.

Tri Tips are extremely versatile. Great for the smoker, reverse seared on the grill, or seared and finished in the oven. Shave it thin for sandwiches or sliced and served on a platter to share.
